Ingredients:
500 gr of chicken fillets cut into cubes
2 tablespoons of olive oil
1 onion finely chopped
4-5 sticks of celery
1 carrot chopped
100 gr of finely chopped bacon
2 garlic cloves (mashed)
1 tablespoon of flour
1 tablespoon of tomato sauce (or half a tin of chopped tomato sauce)
150 gr of red wine
150 gr of chicken gravy
1 tablespoon of parsley finely chopped
Salt, pepper and olives (Kalamon olives with no pit)
450 gr of tagliatelle pasta
50 gr of parmesan cheese (grated)
Preparation:
Heat the olive oil in a pan and season the chicken with salt and pepper. Add the onion, the celery, the carrot and sauté. Sprinkle with flour and add the garlic, the wine, the gravy, the tomato sauce and simmer for 45 minutes. Boil the tagliatelle and pour them in a colander when ready. Cook the bacon and add the pasta and pour the tomato sauce. Sprinkle with parsley and cheese.
