Ingredients:
¼ kilo quince (peeled)
¼ kilo of sugar
2 cups of water
2 teaspoons vanilla
1 teaspoon lemon juice
½ cup of almonds (blanched)
Preparation:
Choose the biggest and softest quinces, dry and peel them, then slice very thin. Cut again each slice into narrow pieces and place in water. Wash them and then boil until they are soft. Add the sugar and bring to boil, the quinces must keep their golden color. Add the lemon juice and the vanilla and once they have boiled for 1-2 minutes, add the almonds and leave the mix to cool down.
