Ingredients:
Courgette blossoms
½ kilo of rice
1 cup of cooking oil
½ kilo of ripe tomatoes
1 onion
Salt, pepper
Parsley
Mint, fennel
Preparation:
Blossoms have to be open; therefore we have to pick them out in the morning. Wash them and prepare the stuffing. Finely chop the parsley, mint, fennel, onion and tomatoes. Add oil, salt and pepper, rice and water and stir. Use half of the rice if you wish and the rest use minced meat. With the stuffing made, fill the blossoms and place them in a pot. Cover them with water and place a plate on top so they don’t open, let them cook.
