Ingredients:1 kilo of figs (using the immature green figs)
1 kilo of sugar
1 teaspoon of lemon juice
2 cups of water
3 vanillas
Preparation:
Choose small figs, remove the stems and wash. Place them in a pot full of water and leave them until they have softened. Then drain and place in water mixed with copper sulfate (½ teaspoon in 10-12 cups of water). Leave them for half an hour, then wash with lots of water and drain thoroughly. Place the sugar in the pot with the water and boil for 5 minutes and then add the figs and boil then for another 5 minutes; take the pot off the heat and leave for 24 hours. Boil and skim foam, add the lemon juice and the vanillas and leave the sweet to set.
